Agila Series Kiritsuke Knife
The Agila Series Kiritsuke Knife embodies the refined balance of Japanese design and Filipino craftsmanship. Traditionally reserved for master chefs in Japan, the Kiritsuke—meaning “slit open”—is a hybrid between the Gyuto (Japanese chef’s knife) and the Yanagiba (sashimi knife). Its long, elegant profile and distinctive angled tip make it both versatile and precise, capable of performing a wide range of slicing and cutting techniques with finesse.
This knife excels at slicing fish, fine vegetable work, and detailed preparation tasks. The pointed tip provides superior control for intricate cuts, while the extended blade length enables long, fluid motions ideal for sashimi and filleting. With its hybrid profile, the Kiritsuke serves beautifully as both a sashimi knife and a general-purpose chef’s knife.
Forged from carbon leaf spring steel, the blade offers exceptional edge retention, durability, and sharpness. It’s paired with a locally sourced Kamagong (Philippine Ebony) handle, shaped for ergonomic comfort and a secure, non-slip grip. This combination of high-performance steel and fine hardwood creates a knife that is both powerful and elegant.
As this knife is made from high-carbon steel, it is not rust-resistant. To preserve its condition, always dry the blade thoroughly after washing and apply a light coat of oil periodically to prevent corrosion.
Each knife is accompanied by a handcrafted wooden saya, providing both protection and aesthetic refinement.
